CHARLES APPREY
I am a Snr. Lecturer and researcher at the Kwame Nkrumah University of Science and Technology with expertise in the area of Clinical and Nutritional biochemistry. Over the years have, I been involved in a number of researches in areas such as food systems, Nutritional intervention in some non-communicable diseases such as cancer, diabetes and hypertension and also focused a number of my research on the food environment. My PhD studies focused on Nutritional intervention in children undergoing cancer chemotherapy for (Burkitt’s lymphoma and Wilms’s Tumors) at the Komfo Anokye Teaching Hospital, Ghana. I have many years of laboratory experience and am a recipient of a grant from Nestle Foundation to investigate the underlying causes of malnutrition in pregnant adolescents in Ghana. I have also been involved in the Researching the obesogenic food environment in Ghana and South Africa research funded by the International Development Research Centre, Canada where we investigated the value chain of some healthy and non-healthy food commodities including fruit and vegetables. I have about 6 years of teaching experience and currently have 46 publications in peer-reviewed journals with 15 peered reviewed abstracts from conference presentations. I have also served as an internal examiner for over 35 PhD, MPhil and MSc students in Human Nutrition and Dietetics and the undergraduate programme in Biochemistry at the KNUST. Currently am an external examiner for the Department of Nutrition at the University of Ghana and the Lilongwe University of Agriculture and Natural Resources, Malawi. I am currently a member of the Research and Innovation sub-committee of the Ghana Standards Authority as well as a programme assessor for the Ghana Tertiary Education Commission. I have also served as a reviewer for a number of International Journals some of which include; Frontiers in Nutrition, Journal of Nutritional Science, Nutrition and Food Science, Nutrition and Cancer Journal, Asian Food Science Journal, International Journal of Tropical Diseases and Health, Journal of Advances in Medicine and Medical Research. I have coordinated the PhD/MPhil/MSc. Human Nutrition and Dietetics at the KNUST for the past three years and currently the Department Examinations Officer.
