Dr. Charles Manful
Dr. Charles Manful is an Assistant Professor in the General Science and Functional Foods Programs at Memorial University of Newfoundland, Grenfell Campus. He is a synthetic organic chemist by training and has 10 years experience in the application of metabolomics for food quality and safety assessment. His research interests are multidisciplinary and span plant science (boreal berries production systems), food science (DOE/RSM, functional foods formulation, quality and safety assessment), and natural products chemistry (bioactives characterization, agro-wastes repurposing). Dr. Manful’s research work at the Functional Foods and Sensory Laboratory, Grenfell Campus, seeks to repurpose food wastes and agricultural by-products for functional foods and product development as strategies for waste/cost reduction and full resource utilization in the Province’s Agric sector. He supervises undergraduate and graduate research, and is currently researching green extraction methods to optimize recovery of biologically active compounds from agro-wastes, canola, blue mussels, berries, and beets using tunable extraction platforms, such as SFE, ASE, UAE and MAE. Biologically active compounds possess nutritional and medicinal properties which have economic value for several applications ranging functional foods, industrial applications, cosmeceuticals, and nutraceuticals.
