Researcher profile
Ken D. Stark
I received my B.Sc. (Honours) from the University of Toronto and my Ph.D. from the University of Guelph examining the use of omega-3 polyunsaturated fatty acids to lower cardiovascular disease risk factors in postmenopausal women under the supervision of Dr.Bruce Holub. I then completed a post-doctoral fellowship at the National Institute on Alcohol Abuse and Alcoholism of Health with Dr. Norman Salem where I examined docosahexaenoic acid metabolism during pregnancy and I developed fast gas chromatography methods to profile blood fatty acids. At the University of Waterloo, our lab examined sex differences in omega-3 polyunsaturated fatty acid metabolism along with differences during pregnancy. We also continued to develop methods to increase fatty acid analytical throughput and adapted lipidomic analytical techniques for nutritional research purposes.
