Her research focuses on the field of microbiology for the quality of foods, particularly: • Study and application of fermentation processes to develop biotechnological protocols for improving quality, safety and shelf-life of foods • study of bioactive compounds of microbial origin and their metabolism. • development of functional and probiotic foods, improvement of nutritional/functional quality and extension of the shelf-life of cereal, animal and plant products through the use of microorganisms and their metabolites. • study of the growth performances of lactic acid bacteria and application of predictive microbiology to optimize fermentative processes VISITING ACADEMIC POSITIONS September 2011: Within the Project FP7-222 654-DREAM at ADRIA development, IDEA Unit-Interaction & dynamics of microbial ecosystems in food - Creac'h Gwen 29196, Quimper, France, under the supervision of Dr. Veroniqué Huchet.
